A long time ago, in 1997, my brother Francisco Campos, affectionately known as Paco, began working in the kitchen of Mama Carolla’s, eventually becoming its sous chef.

Every day, after finishing his shift, he would take the same route home, passing by a small shopping center on 54th Street before reaching Keystone. Each time he passed by, he would say, “Someday, I will open my business in this place…“

Paco continued to work at Mama Carolla’s for over 17 years. Finally, on April 15, 2015, his dream came true when he opened the doors of his own business, calling it ‘Indy Tacos.’ With the unwavering support of our family and through relentless dedication and hard work, Indy Tacos has thrived for nine years. While Paco focused on preparing both simple family recipes and innovating with his own creations, I learned from him, assisting whenever he needed my help.

In 2023, we received the heartbreaking news that Paco was diagnosed with lung and bone cancer. Despite the challenge, my husband Chevy, my daughter Jackie, and I, along with our dedicated team members Angel and Maynor, have committed to continuing the dream of Indy Tacos. With faith, effort, and pride, we strive to uphold the wonderful legacy that my brother Paco created.
